Herb roasted chicken

Ingredients
  • 375 g ready-made herbed stuffing mix
  • 1 cup (250 ml) water
  • 45 g butter
  • 1 large onion, chopped
  • 34 cup (60 g) frozen chopped spinach, thawed
  • 60 g prosciutto or cooked ham, cubed
  • 2 cloves garlic, chopped
  • 2 teaspoons dried sage
  • 1/2 teaspoon dried rosemary
  • 2 tablespoons each thickened cream and lemon juice
  • 1 roasting chicken (about 1.5 kg)

1 Preheat oven to 180°C. Place roasting rack in large roasting pan.
2 In large bowl, mix stuffing with the water. In large frying pan, melt butter over medium heat. Add onion, spinach, prosciutto, garlic, sage and rosemary to pan; sauté until tender, about 5 minutes.
3 Add spinach mixture to stuffing. Stir in cream and lemon juice; mix well.


4 Spoon stuffing loosely into chicken cavity, filling it about 3/4 full. Fold skin over openings and close with metal skewers. Tuck wings under chicken. Place on roasting rack.

 

5 Roast chicken until the juices run clear when a skewer is inserted into the thigh, not touching the bone, and the chicken is golden, about 1 hour 45 minutes.
