Zesting

Zest is the outer coloured peel of a lemon or other citrus fruit. Zesting is the techniques of removing it. Zest is used for flavouring or decorating a dish. A vegetable peeler is handy for zesting but there are also special zesters available. It is important not to include the bitter white pith. Try our recipe that uses lime zest.
