Here's how
Preheat oven to 200C. Grease 10 friend tins or muffin tins.
Place butter, almond meal, lemon rind, sifted icing sugar and flour together in a mixing bowl. Mix until well combined.
In a separate bowl, lightly beat eggwhites with a fork until frothy. Fold eggwhites into almond mix until just combined, do not over mix.
Spoon into prepared tins. Place tins onto a baking tray. Bake at 200°C for 20-25 minutes or until skewer inserted into a friand comes out clean.
Remove from oven, allow to stand for five minutes before turning out onto a wire rack to cool. Dust with extra, sifted icing sugar. Decorate each friand with some shredded lemon rind.
