
MATT'S PRAWN & SCALLOP SKEWERS WITH SALSA
Preparation time: 10 mins plus overnight soaking time
Cooking time: 5 mins
Makes 12
12 wooden skewers
36 green prawns
36 pieces scallop meat
2 Tbsp olive oil
2 roma tomatoes, seeded, finely chopped
1 avocado, peeled, seeded and chopped
Juice of ½ lemon or lime
½ bunch continental parsley, finely chopped
½ small Spanish onion, finely chopped
Salt and pepper, to season
Lime or lemon wedges, to serve
Green salad, to serve
1. Soak 12 wooden skewers in cold water overnight.
2. Peel and devein prawns, removing tails. Thread 3 prawns and 3 scallops onto a skewer, alternating as you go. Repeat with remaining skewers, prawns and scallops.
3. Brush skewers with olive oil and put on a hot BBQ plate. Cook for about 1½ minutes each side until cooked through. Remove from heat. Serve immediately with salsa, lime or lemon wedges and green salad.
4. To make salsa, combine tomatoes, avocado, juice, parsley and onion. Season with salt and pepper.
ADAM'S MIXED GRILL WITH SECRET SAUCE
Preparation time: 10 mins plus overnight marinating time
Cooking time: 10 mins
Serves 6
6 x 200g eye fillet steaks
Secret recipe marinade
2 Tbsp butter
12 pork sausages
Mild English mustard, to serve
HP sauce, to serve
Green salad, to serve
Crusty bread, to serve
1. Marinate steaks in the fridge overnight.
2. Cook steaks on a hot BBQ grill for about 5 minutes on each side or until cooked as desired. Top each with a small amount of butter during cooking. Meanwhile, cook sausages for about 10 minutes or until cooked through. Serve steak and sausages with mustard, HP sauce, salad and bread.
