Spicy lamb and sweet potato

Preheat oven to 200ºC. Line a large oven tray with baking paper. Peel a large sweet potato and cut into 3-4cm pieces. Put sweet potato in a mixing bowl, add 1 tablespoon olive oil and 1 teaspoon each of sea salt and freshly ground black pepper. Toss to combine. Put potato on half of the prepared tray and bake for 10 minutes. Remove tray from oven. Put 8 lamb cutlets on other half of tray, sprinkle with a little olive oil and bake for 5-6 minutes. Remove tray from oven, turn cutlets and potato and top each cutlet with a spoonful of Chris’ Chunky Peri Peri, Chilli, Cashew & Parmesan spread. Bake for 6-7 minutes. Remove from oven and stand for 2-3 minutes before serving.
