Peel 6 garlic cloves and cut in half. Using a small sharp knife make 12 small incisions in a 1kg piece of rump steak. Cut 6 anchovies in half. Stuff a piece of garlic, a piece of anchovy, a little mustard and a sage leaf in each incision.
Put the meat in a heavy-based ovenproof dish cook covered for 2-3 hours at 140°C.
