Serves 4
1.5kg chicken pieces
6 garlic cloves, peeled
2 Tbsp extra virgin
olive oil
1 lemon, quartered
Sea salt and freshly ground
black pepper

Baked layered potato
8 desiree potatoes,
skin on, thinly sliced
2 onions, sliced
1 bunch fresh bay leaves
300ml pouring cream
Salt and pepper
1 Preheat oven to 180°C. Put chicken pieces and garlic in a single layer in a baking dish. Drizzle over oil. Squeeze juice from lemon quarters over the chicken and put lemon pieces in baking dish. Season with salt and pepper.
2 Roast for 45-50 minutes or until chicken is cooked through, basting with pan juices halfway through. Remove from oven and set aside, covered, for 5 minutes before serving with Baked layered potato.
3 To make Baked layered potato: Arrange half the potato slices, overlapping, in the bottom of an ovenproof dish. Top with onion slices, a few bay leaves and with remaining potato slices. Pour over cream, season with salt and pepper, and top with a few more bay leaves. Bake on top shelf of oven, at the same time as the chicken, for 45-50 minutes or until top is golden and potato is cooked.
